One-Pot Chicken (with Olives) and Tomatoes

Equipment

Ingredients

  • 4 skinless and boneless chicken breasts

  • 1 teaspoon mix herbs (oregano, basil, persil)

  • 1 teaspoon garlic powder

  • sea salt to taste

  • black pepper to taste

  • 1 tablespoon olive oil

  • 1 small onion, chopped

  • ½ cup pitted olives, optional

  • 1 cup cherry tomatoes

Instructions

Season chicken breasts with herbs seasoning, garlic powder, sea salt, and black pepper.

SAUTÉ CHICKEN. Add oil to a large sauté pan over medium heat. Place the chicken in the hot pan. Add the onion, olives, and cherry tomatoes on top.

Cover and let the chicken cook for about 15 minutes.

Check the pot and turn over the chicken. Add about ¼ cup of water, if the pan looks dry.

Cover and cook for an additional 10 minutes until the chicken is cooked all the way through.

Notes

Serve with a side salad.
